The palate is subtly sweet and floral combined with spiced sandalwood and agarwood. The result is a long and deep finish with undertones of spiced Mizunara wood. For this special centennial edition, a rare Mizunara oak was used during the ageing process, elevating the flavours while preserving Hibiki’s character and essence. I’ve had the pleasure of tasting their 12 year old blend and it was delicious. So I had high hopes even though Japanese Harmony Master’s Select is a non age stated (NAS) travel retail whisky, which usually can be a guarantee for mediocre whisky. Aside from the 21yo expression, the House of Suntory has also revealed two centennial limited-edition bottle designs for its Hibiki Japanese Harmony Master’s Select whisky. One will be released for the domestic market, and one for travel retail. Both expressions highlight the 100th Anniversary logo on the outer box and outer label. Rather beautifully, ‘hibiki’ means resonance in Japanese, and this speaks to the artistic sensibility of the product. Hibiki was born in the form of a blend that was the result of sampling and tasting aged malt whiskies from one million casks at Suntory. The current incarnations are made from a blend of more than 30 individual malt and mellow grain whiskies, and the final blend is topped off with a whisky aged more than 30 years. This concludes a process that sees the master blender taste over 300 malt whisky samples a day. From its inception to its current forms, Hibiki’s craft and method reflects its core ideologies of harmony and resonance with a caring and precise vision. The limited-edition Hibiki 21yo will be available in only five key strategic travel retail locations: Singapore, London, Hainan, Dubai and Frankfurt. The notes of orange marmalade and dark chocolate give a lovely sweetness that pairs well with sashimi and nigiri. The tropical fruits and citrus zest bring out the juicy flavours in salmon, while the gingerbread spice adds a hint of warmth. On the palate it displays a delightful combination of orange marmalade and dark chocolate balanced with subtle bitterness, along with notes of tropical fruits, citrus zest, gingerbread spice, coconut and brown sugar. That ginger-like note from the palate is prominent, with a vague wet cardboard note. The oaky bitterness lingers the longest – rather unpleasant, frankly. Again, the complexity is up a bit, but this is the most disappointing part of the experience. Nose: Similar to regular Harmony, but with more dry oakiness up front. Not particularly fruity, but I do get light pears, plums, bananas and orange rind (plus some lemon curd). Floral, with some sort of fruit blossom. Lots of vanilla, as before – perhaps even more so. Toasted coconut, which is new. Wood spice. A slightly funky note, vaguely vegetal, which I don’t recall on standard Harmony. Definitely a bit more character here, but not all of it good. Also more acetone, which detracts for me. The name Hibiki means "resonance" in Japanese.
